250 gr beans
1 small chopped onion
1 garlic clove minced
1 cup chopped tomatoes
Soak the beans in plenty water during the night.
Rinse the beans and put them in a pot. Cover them with water and bring them to a boil. Change the water and cover the beans again with water and boil for about 40 minutes.
Sauté the chopped onion in olive oil. Add the garlic and continue to sauté for about a minute. Add the chopped tomatoes, the parsley, salt & pepper and boil for 5-10 minutes.
Put it in a roasting tray, add the beans and mix gently.
Then put the tray in the preheated oven in 200 oC for 45 minutes to an hour.
